The most representative label of the collection, it is obtained from the pressing of green olives mainly of the Tonda Iblea variety, which give life to an oil with a strong personality, with an intense profile characterized by green notes of tomato and grass. The olives are harvested by hand in the Chiaramonte Gulfi area within the first half of October and processed immediately after harvesting in our oil mill.
